MISCELLANEOUS 

Biscuit Pudding
6 or 7 buttered biscuits, 2 eggs, 1 cup sugar, 2 cups milk, 1 teaspoon vanilla extract, ground nutmeg

Place buttered biscuits (buttered side down) in 2-quart casserole dish. Mix eggs, sugar, milk and vanilla; pour mixture over biscuits. Let stand 10 or 15 minutes, to soak in. Sprinkle ground nutmeg plus a little more sugar over top. Bake at 350 degrees for 30 minutes.

Cheese Souffle
2 tablespoons butter, 3 tablespoons flour, 1/2 teaspoon salt, 1/8 teaspoon dry mustard, dash of cayenne pepper, 1/2 teaspoon Worcestershire sauce, 1 cup milk, 1 cup finely-chopped cheese, 4 separated eggs

Melt butter; add flour, other dry ingredients, Worcestershire sauce and scalded milk. Add cheese and egg yolks; fold in beaten egg whites. Cook in double boiler or chafing dish for about 30 minutes. Do not look at the souffle while it is cooking! Serve at once.

Creole Eggs
12 hard-boiled eggs, 1 large chopped onion, 1 chopped green onion, 1/2 cup chopped celery, 1 chopped bell pepper, 1 can tomatoes, 1/2 tablespoon chili powder, 2 bay leaves (remove before serving), salt & black pepper to taste, buttered bread crumbs

Saute fresh vegetables in oil or bacon grease until tender. Add tomatoes and seasonings; cook until thickened (you may want to add a little water and a dab of your favorite thickener). Carefully slice hardboiled eggs with very sharp knife; make alternate layers of eggs and sauce in a buttered casserole dish (be sure top layer is sauce, to prevent eggs from getting dry and tough). Top with buttered bread crumbs. Bake at 350 degrees until it bubbles.

Elephant Stew
1 medium-size elephant, 2 rabbits (optional), salt & pepper to taste, lots of brown gravy

Cut elephant into small, bite-size pieces (will take about 2 months). Reserve trunk for storage. Add enough brown gravy to cover. Cook over kerosene fire for about four weeks at 465 degrees. Will serve about 3,800 people. If more are expected, add the two rabbits (do this only if absolutely necessary, as most folks don't like to find hare in their stew).

Hawaiian Farmer Sandwiches
12 slices bread, softened butter, 1 1/2 cups (6 ounces) diced cooked chicken, 1 1/2 cups (6 ounces) diced cooked ham, 1/2 cup diced celery, 1/2 cup drained crushed pineapple, 1/3 cup mayonnaise, 6 slices Mozzarella cheese, 3 tablespoons finely-chopped pecans, 1 1/2 tablespoons chopped bell pepper, 1 teaspoon thinly-sliced green onion tops, 1/2 teaspoon salt, dash of black pepper

Butter bread on one side only. Mix together chicken, ham, celery, pineapple, mayonnaise, pecans, green pepper, onions, salt & pepper. Divide mixture equally on unbuttered side of 6 slices of bread, topping each with 1 slice of cheese. Close sandwiches with remaining slices of bread, buttered side up. Grill on both sides until cheese starts to melt and sandwich is golden.

Mother's Tomato Juice Cocktail
2 large cans V-8, 2 1/2 teaspoons grated onion, 2 1/2 teaspoons grated celery, 2 1/2 teaspoons horseradish, juice of 6 fresh lemons, 2 tablespoons Worcestershire sauce, 3/4 teaspoon paprika, 1 1/2 teaspoon sugar (suit your own taste)

Combine all ingredients in large jar; shake well and chill. If you like it hot, add a little red pepper or Tabasco sauce. This is better if allowed to chill overnight. Mother served it with cheese-biscuit appetizers.

Rum Punch
4 tablespoons tea leaves, 1 quart boiling water, 4 cups sugar, 4 cups water, 2 quarts club soda, 1 quart orange juice, 1 large can pineapple juice, 1 quart bottled lemon juice, 1 quart light rum

Steep tea leaves in quart of boiling water for 5 minutes; strain and reserve. Boil sugar and 4 cups water for 5 minutes; let cool a bit, then add tea. Add orange juice, pineapple juice, lemon juice, club soda, rum. Makes 7 quarts.
